Veggie Omelette

Ingredients
- 3 large eggs
- 1/4 cup milk
- 1/2 cup bell pepper, diced
- 1/4 cup onion, diced
- 1/4 cup spinach, chopped
- 1/4 cup grated cheese (optional)
- Salt and pepper to taste
- Olive oil or butter for cooking
Instructions
- Whisk together eggs and milk, then season with salt and pepper.
- Heat a pan over medium heat and add olive oil or butter.
- Add bell peppers, onions, and spinach to the pan and sauté for 2-3 minutes until softened.
- Pour the egg mixture into the pan and let cook for 2-3 minutes until the edges start to set.
- Sprinkle cheese on top, then fold the omelette in half and cook for another minute or until fully set.
