Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup fresh lemon juice
  • 1/4 cup tahini
  • 1 small garlic clove, minced
  • 2 tablespoons olive oil, plus more for serving
  • 1/2 teaspoon ground cumin
  • 2-3 tablespoons water
  • Salt to taste
  • Paprika and chopped parsley for garnish

Instructions

  1. In a food processor, combine chickpeas, lemon juice, tahini, garlic, olive oil, and cumin.
  2. Process until smooth, about 1 minute.
  3. With the processor running, add water one tablespoon at a time until the hummus reaches your desired consistency.
  4. Season with salt to taste and process again to combine.
  5. Transfer to a serving bowl, drizzle with olive oil, and sprinkle with paprika and chopped parsley.
  6. Serve with pita bread, pita chips, or fresh vegetables.
