Grilled Chicken Salad

- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil, divided
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
Instructions
- Preheat grill to medium-high heat.
- Brush chicken with 1 tablespoon olive oil and season with Italian seasoning, salt, and pepper.
- Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (74°C).
- Let chicken rest for 5 minutes, then slice into strips.
- In a large bowl, combine salad greens, tomatoes, cucumber, and red onion.
- In a small bowl, whisk together remaining olive oil, balsamic vinegar, Dijon mustard, garlic, salt, and pepper to make the dressing.
- Toss the salad with the dressing.
- Top with grilled chicken strips and crumbled feta cheese.
