Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush chicken with 1 tablespoon olive oil and season with Italian seasoning, salt, and pepper.
  3. Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (74°C).
  4. Let chicken rest for 5 minutes, then slice into strips.
  5. In a large bowl, combine salad greens, tomatoes, cucumber, and red onion.
  6. In a small bowl, whisk together remaining olive oil, balsamic vinegar, Dijon mustard, garlic, salt, and pepper to make the dressing.
  7. Toss the salad with the dressing.
  8. Top with grilled chicken strips and crumbled feta cheese.
