Ingredients

  • 2 tablespoons sesame oil
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 zucchini, sliced
  • 1/2 cup broccoli florets
  • 1/2 cup snap peas
  • 1/2 cup mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon ginger, grated
  • 1 clove garlic, minced
  • Protein of choice (chicken, tofu, shrimp, or beef)

Instructions

  1. In a large skillet or wok, heat sesame oil over medium-high heat.
  2. Add the garlic and ginger and stir-fry for 1-2 minutes until fragrant.
  3. Add the vegetables and stir-fry for 5-7 minutes, or until tender-crisp.
  4. In a small bowl, whisk together soy sauce, rice vinegar, and honey.
  5. Add the sauce to the skillet and toss to coat the vegetables.
  6. Serve with your choice of protein on top.
