Vegetable Stir Fry

Ingredients
- 2 tablespoons sesame oil
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 zucchini, sliced
- 1/2 cup broccoli florets
- 1/2 cup snap peas
- 1/2 cup mushrooms, sliced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 teaspoon ginger, grated
- 1 clove garlic, minced
- Protein of choice (chicken, tofu, shrimp, or beef)
Instructions
- In a large skillet or wok, heat sesame oil over medium-high heat.
- Add the garlic and ginger and stir-fry for 1-2 minutes until fragrant.
- Add the vegetables and stir-fry for 5-7 minutes, or until tender-crisp.
- In a small bowl, whisk together soy sauce, rice vinegar, and honey.
- Add the sauce to the skillet and toss to coat the vegetables.
- Serve with your choice of protein on top.
