Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup roasted vegetables (carrots, zucchini, bell peppers)
  • 1/4 cup tahini
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and cook it with water or broth according to package instructions.
  2. Roast vegetables at 400°F (200°C) for 20 minutes, stirring halfway through.
  3. In a small bowl, whisk together tahini, lemon juice, olive oil, sesame seeds, salt, and pepper to make the dressing.
  4. Assemble the bowl by layering quinoa, roasted vegetables, and drizzling with tahini dressing.
