Quinoa Bowl

Ingredients
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 cup roasted vegetables (carrots, zucchini, bell peppers)
- 1/4 cup tahini
- 1 tablespoon lemon juice
- 1 teaspoon olive oil
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water and cook it with water or broth according to package instructions.
- Roast vegetables at 400°F (200°C) for 20 minutes, stirring halfway through.
- In a small bowl, whisk together tahini, lemon juice, olive oil, sesame seeds, salt, and pepper to make the dressing.
- Assemble the bowl by layering quinoa, roasted vegetables, and drizzling with tahini dressing.
