Classic Pancakes

- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs, then add milk, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir just until combined. The batter should be slightly lumpy.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Cook until bubbles form on the surface and the edges look dry, about 2-3 minutes.
- Flip and cook until browned on the other side, about 1-2 minutes more.
- Serve hot with maple syrup, butter, and fresh berries.
