Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, beat the eggs, then add milk, oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined. The batter should be slightly lumpy.
  4. Heat a lightly oiled griddle or frying pan over medium-high heat.
  5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  6. Cook until bubbles form on the surface and the edges look dry, about 2-3 minutes.
  7. Flip and cook until browned on the other side, about 1-2 minutes more.
  8. Serve hot with maple syrup, butter, and fresh berries.
